Healthy Cherry Bakewell Protein Balls!

I recently became the proud owner of a Vitamix, I never thought I could be this happy about a kitchen appliance, but it happened! Determined to make great use of this powerhouse of a machine I thought I would make myself (and him indoors) embark on a 30-day smoothie challenge. I decided we'd replace breakfast with a yummy smoothie, but in order to make a smoothie a 'meal replacement' you must add a bit of bulk & protein in the form of ingredients like oats, almond butter and coconut oil. The only thing is that I found it made the smoothie consistency a little too thick for my liking and overpowered the taste. 

The solution? Protein balls, of course! I asked our resident foodie expert Cate to come to the rescue with a recipe for breakfast balls that we could enjoy alongside our morning green smoothie and she has come up with a cracking recipe!

Whip up a batch of these ready for the week ahead and you'll be able to enjoy Cherry Bakewell..for breakfast! Who said you can't have your cake and eat it?

Cherry Bakewell Protein Balls

These protein balls are named after cherry bakewells for their distinctive almond flavour (mimicking frangipane, you'll be shocked at how much the taste makes you think of Mr. Kipling!) and scattering of dried cherries. We dare you to try and eat just one.

Makes 15 balls
1 cup (90g) porridge oats
1/2 cup (125g) almond butter
1/4 cup (65g) sunflower seeds
small handful dried cherries
a few medjool dates
2 capfuls almond extract
  1. Pile all your ingredients into a high speed blender or food processor and pulse, pulse, pulse! Keep going until they come together.
  2. Grab a tablespoon of the mixture at a time and gently roll into a ball, then you're good to go.
I love keeping mine in the fridge, but they'll be just fine in an air tight container.
